This simple zafran rice (saffron recipe) recipe is from the southern region of Thailand, where it is frequently consumed with roast chicken or chicken tikka. Saffron rice adds a distinctive touch to meals and is almost as simple to prepare as ordinary rice. You may prepare this dish without a rice cooker. Ingredients of Zafran Rice:
- Rice 2 cups soaked
- Cinnamon sticks 2
- Cloves 4-5
- Cardamoms 5
- Bay leaf 2
- Cumin seed 1 tea spoon
- Cashew nuts 20
- Raisins quarter cup
- Onions sliced 2
- Crushed saffron
- Hot milk
- Oil 2 tbs
- Clarified butter 2 tbs
- water 4 cups
- salt
Method for Zafran Rice:

First of all take a hot milk and add crushed saffron, soaked it for around an hour. Now take a pan, add oil and cashews and raisins, fry till light brown in color then take a side and add onions in the same pan fry it till golden brown.
After this in the same pan add clarified butter and add your all spices which are cinnamon, cloves, cardamoms, bay leaf and cumin seeds. Once the spices start infusing the aroma add rice mix it and fry it for 1 minute add water give a slight mix and add salt.

Now cover it and cook till the rice is 80% done, add cashews and raisins also when it is 80% done then add fry onions and saffron milk cover it and cook it for 3 minutes. After 3 minutes check it when it is done turn off the flame and cover it for 3 minutes more.
