An Indian and Pakistani delicacy called Gajar ka Halwa (Gajar Halwa) is created with milk and carrots. For our family and many others in South Asia, it has long been a go-to winter dessert and comfort meal. While each family has its unique recipe and additions, the basic ingredients usually remain the same. The ingredients for a Gajar ka Halwa include red carrots, ghee, sugar, cardamom seeds, and milk (or a milk substitute). Typically, nuts are used as garnish.
The red carrot is one of the many culinary treasures that the winter season delivers. We used to wait for the weather to become colder and the carrots to get sweeter as a child. Once the carrots have been boiled down, the sweet flavor and texture are out of this world. When eaten warm on a chilly winter day, it almost turns into a fudgy consistency and becomes really delightful.
Ingredients:
- Grated Gajar (Carrots) 1 Cup
- Desi ghee 1 tsp
- Badam (Almonds) 4 to 5
- Doodh (Milk) 2 litre
- Desi ghee (Butter) 2
- Green Cardamom 2 to 3
- Sugar to taste
How to make Gajar Halwa
First you have to take red juicy carrots and rinse it very well and now peel the carrots using peeler and then grate the carrots.
Its time to cook them, now in a heavy pan add all the grated carrots allow the carrots to cook on high heat also add sugar, ghee and cardamom seeds (butter) stir it occasionally because the carrots will release a lot of water and we want to dry it as much as can. When it is completely dry turn off the flame and take it a side.
Take a sauce pan and add milk cook it on a high flame mix it contentiously till milk becomes thick and dry. Now take your carrots pan put it on stove again add some almonds and thick milk in this and mix them well dry it and now turn off the flame.
