Easy and healthy chicken salad
This is a cool and refreshing salad to prepare at home. It is very filling and healthy and at the same time it is tasty also with the combination of tendered chicken, vegetables, perfect dressing and with a herbs in it. Great food for lunch ! So let’s see what we need for this chicken salad.
Ingredients For Chicken Salad:
- 1 Big boneless chicken breast
- salt to taste
- pepper to season
- 1 tbsp ginger garlic crushed
- 1 tbsp olive oil
- 1 tsp vinegar
- 1 tsp dried thyme
- 1/2 tsp dried thyme
- 1/2 tsp red chilly flakes
- 3 tbsp light mayonnaise
- 3 tbsp thick low fat yogurt
- 2 tsp lime juice
- 1 tbsp mustard paste/sauce
- 2 tsp Worcestershire sauce
- some fresh cilantro
- 1/4 cup dry parmesan cheese
- 1 medium onion chopped
- 1/4 cup chopped celery
- 2 medium lettuce chopped
- 6-8 cherry tomatoes halved
- 1/2 cup croutons
- some toasted walnuts and almonds
First we are going to marinate the chicken breast with some salt, black pepper, ginger garlic, little olive oil, vinegar, thyme and red chili flakes, let it marinate and coat on all sides so spread out the marinate evenly and let it rest for 15-20 minutes. While the chicken is marinating, we can start preparing the dressing for chicken salad.
In a large bowl, add the mayonnaise, yogurt, lime juice, olive oil, mustard sauce, salt, Worcestershire sauce and the fresh cilantro and mix everything well to make a yet flowing consistency and put this into the fridge to chill.
Take another bowl add onion, lettuce and tomatoes mix them and you can also use any other vegetable of your choice as well and keep it a side.
Now heat a little bit of olive oil in a non-stick pan and place the chicken breast onto it and let it cook on each side for 2-3 minutes and then flip it over onto the other side. Check if it is done and gets good golden brown color, then put it into the plate and let it cool down a bit.
Cut the chicken into the strips and keep it aside. Now come in the assembling part. Mix vegetables, chicken strips into the dressing and give it a good mix to coat well and check salt over here. Add celery, walnuts and almonds over here, also add the croutons and mix them well. Lastly, add the parmesan cheese.
